Sweet potato salad

INGREDIENTS

4 sweet potatoes, peeled and cubed
1 shallot, chopped
4 green onions, chopped
1/4 cup sherry vinegar
2 tablespoons olive oil
2 tablespoons honey
1 teaspoon coriander seeds
1/2 teaspoon cumin powder
1/4 teaspoon sumac
Salt to taste

INSTRUCTIONS

  • Roast the potatoes in the preheated oven at 375F for 25 minutes.
  • Transfer the potatoes in a salad bowl and stir in the shallot and green onions.
  • Make a dressing by combining the vinegar, olive oil, honey, coriander seeds, cumin powder and sumac in a bowl. 
  • Add salt to taste then drizzle the dressing over the salad and mix it gently.
  • Serve the salad warm or chilled.
